Alicia Joseph is here again with another of her delicious recipes. So let’s go Italian with a bottle of Chianti, crusty bread, and pasta with a little butter mixed in.

Italian Meatloaf

  • 2 slices rye bread
  • 2 slices white bread
  • ½ cup milk
  • 1 medium onion (chopped fine)
  • 4 sprigs parsley (chopped fine)
  • 1 lb. lean ground beef
  • 3 tbsp. Parmesan cheese (grated)
  • 1 egg (beaten)
  • 1 tsp. salt
  • ¼ tsp. pepper
  • 2 tbsp. butter or margarine
  • 1 8 oz. can tomato sauce
  • 1 tsp. oregano or Italian seasoning
  1. Preheat oven to 350°F.
  2. Tear both breads into soft bread crumbs. Soak them in milk 5 minutes.
  3. Combine onion, parsley, meat, cheese, egg, salt, and pepper in a large bowl.
  4. Drain milk from bread. Add bread to the bowl and mix until well blended.
  5. Shape into a loaf. Place in shallow baking dish.
  6. Dot with butter or margarine.
  7. Bake 30 minutes. Remove from oven.
  8. Pour tomato sauce over the loaf and sprinkle with oregano or Italian seasoning.
  9. Bake 20 – 30 minutes longer or until done.
